Avocado is a nutrient dense fruit that has a secure place on iWellness plans. With fibre, protein and vitamins K, C, E & B6, adding avocado to a meal is a good choice. Here we are also adding an egg to supercharge the meal.

Ingredients

½ Avocado
1 Egg
Optional 1Tbsp Ghee for a fried egg (day 15 onwards)
2 Cherry Tomatoes Finely Chopped
¼ Onion Very Finely Chopped
Fresh parsley
1 Slice Rye Bread
Salt & Pepper. We use Pink Peppercorns!

Method

Place the avocado in a bowl and mash. Add the tomato and onion. Season. Set aside. Cook your egg your way. Toast Rye bread. Spread avocado mixture on bread, top with the egg. Season with any herb such as parsley - rich in vitamin and minerals and antioxidants that neutralise free radicals and reduce inflammation.
