A delicious, nutritious ‘must-have in your fridge’ dressing! We at iWellness love this dressing because it is a burst of goodness, particulary with vitamins E and B, to add to so many dishes. Creamy and versatile. Will elevate any savoury dish.
Ingredients
7 Cloves of Garlic
150g Tahini
2 Lemons
½ tsp Ground Cumin
Water
Pinch Salt
Method
Add the garlic cloves (skins included) into a blender with the juice of 2 lemons and the ground cumin.
Blend together until a purée is formed. Place a fine mesh strainer over a bowl and press the purée through it. Squeeze as much juice out of the purée as possible, then discard the solids.
Stir the tahini into the lemon juice mixture – the tahini will seize and go grainy, don’t panic, simply stir in 1 tbsp of cold water at a time until a smooth sauce forms, it should be as thick as yoghurt.
Taste and season with salt. Store in a glass jar if possible. It will keep for a week in the refrigerator.
