Morning Milk Tea & Chia Breakfast Porridge

An alternative to overnight oats, this creamy healthy Chia porridge, with infused tea, spiced nuts and seeds, is created to nourish you in your first meal of the day. This would be super ’batch’ meal to have ready for days ahead . Can be simplified for the healing part of the iWellness 21day plan

Ingredients

English Breakfast Teabags
• 400 ml Water
• 480 ml Milk
• 100 g Chia Seeds
• 250 g Rolled Oats
• 50 g Hemp Seeds
• Pinch Sea Salt

For the Cinnamon Nuts:
• 60 g Pecans
• 6 tbsp Olive Oil
• 45 g Sunflower Seeds
• 40 g Flaked Almonds
• 2 tsp Ground Cinnamon
• 125 ml Maple Syrup
• Pinch
• Sea Salt

Method

Pour the water, salt and milk into a saucepan and bring to a boil. Once boiling, add the teabags then remove the pan from the heat and let the tea steep for 4-5 mins, until you have a dark brew. Strain the tea mixture into a bowl, add the maple syrup to taste. Then, stir through the chia, oats and hemp seeds. Cover and refrigerate for a minimum of 1 hours, ideally overnight if possible. Meanwhile, make the cinnamon nuts by roughly chopping the pecans. Heat the oil in a large frying pan set over a medium heat. Once hot, add the pecans, sunflower seeds and flaked almonds and cook, stirring, until toasted and golden. Remove from the heat and stir through the cinnamon, salt and maple syrup. Transfer to a jar and cover with a lid. Place in the fridge until ready to use.

To serve, spoon the oat mixture into bowls with a dollop of Greek yoghurt, and top with the maple cinnamon nut mix.
