Mackerel with Yoghurt and Thyme on Rye

Mackarel is a brilliant fish for adding into your diet. It is welcome on all iWellness plans. Rich in the omega 3-fatty acids, a good thing, and vitamins D, B12 and Selenium. It is a high quality protein. By combining with yoghurt it elevates the Mackarel into a creamy dip that you can spread onto Rye bread for a nutritious filling meal. You could also spoon into Iceberg lettuce leaves made into a ‘cup’ to create a crunchy fresh snack.

Ingredients

130g smoked Mackarel
2 Tbsp Natural Yoghurt
½ Lemon squeezed
Zest of half a Lemon
Fresh Thyme
Ground Black Pepper
Rye Bread
Optional: 1 tsp Horseradish sauce.
Optional: finely chopped Tomato

Method

Remove skin from Mackarel. In a bowl combine Mackarel and Yoghurt, mix until blended but not too smooth. Add Lemon juice and zest. Add ground black pepper. If using tomato or horseradish sauce add now. Mix. Add fresh Thyme. Toast Rye bread. Spread Mackarel dip onto bread and finish with more ground pepper if desired.
