Chicken Bone Broth

Bone broth is a powerhouse when it comes to nourishment. Protein, Collagen, Selenium, Zinc, vitamins and healthy fats cook down to a simple liquid which can be used as stock in many dishes... or as a base for a soup by adding boiling water. Ingredients

1 Large Organic Free Range Chicken or the carcass of an already cooked chicken.
3 carrots
2 Celery sticks
1 onion chopped
3 white potatoes with skins scrubbed
Thyme sprigs, fresh.
2 Bay Leaves
Juice of 1 lemon
Water

Method

Using a pressure cooker or slow cooker, place all the ingredients except the lemon in and cover the chicken with water. Set heat to a high setting and cook for 3-4 hours until the bones have completely softened. (OR if using a saucepan simmer for up to 8 hours on a low heat checking regularly to make sure water level remains above chicken). Remove carcass and gently pull away meat, reserve the meat. Put carcass, stock and lemon juice into a blender and blitz until smooth. You now have a bone broth. It will be quite thick. Store in a jar in the fridge with a tight lid OR freeze in an ice-cube container to use when needed.
