Protein Benefit:
~30g protein per 100g cooked chicken
Low in saturated fat
High in B12, selenium, and niacin (supports energy and brain health)
Ingredients
1 small green cabbage, cut into wedges
2 tbsp olive oil
2 shallots, finely sliced
2 garlic cloves, minced
500 ml organic chicken or vegetable broth
Fresh herbs: thyme, parsley, or rosemary
Spices: smoked paprika, turmeric, cumin (optional)
Sea salt and black pepper to taste
Method
Season with lemon juice, garlic, black pepper, and a dash of paprika.
Option 1: Pan-sear and roast
Sear both sides in a separate hot skillet for 2–3 mins per side.
Transfer to oven (same temp as cabbage) and bake for 12–15 minutes until cooked through.
Option 2: Poach in the broth
Lay fillets over cabbage during the last 20 minutes of cooking to let them soak up the broth and remain tender.
