🌿 Nutrition Notes
This works well when time is of essence. If there are a few of you to feed simply multiply the recipe. Whip it up the day before and reheat or make fresh on the day in as little as 10 minutes prep and 15 minutes baking or try the air fryer for less time. You are aimimg for a crispy top and juicy berries underneath. Serve before a warm drink of choice ideally within 90 minutes of waking.
Ingredients
30/40g Jumbo oats per serving
2 Egg whites
A dollop of Nut Butter
A bag of frozen Berries of choice
Brown sugar or vanilla powder to taste ( I find this dish sweet enough)
Ceylon Cinnamon
Pinch of sea salt

Method
Blend oats and egg whites by whipping together for a few minutes. Add nut butter, cinnamon and sea salt... blend until combined and sticky. Drain the berries ... keep the juice! Layer berries in a glass dish, cover with the oat mixture, press lightly. Bake at 180 degrees until the oats form a crust. Serve this high fibre, antioxidant, warm dessert-breakfast with a dollop of plain Greek yoghurt if desired.
